About Easy Evenings
We’re so excited to finally have our hands on our brand-new cookbook — our first in over 10 years and a perfect way to celebrate our 40th anniversary. The Riverford Cookbook: Easy Evenings is a collection of more than 100 flexible recipes, all ready in 40 minutes or less.
From creamy squash pasta and speedy chicken & leek pie to one-pan orzo bean stew and throw-together cheesy carrot tacos, you’ll find nourishing meals that are quick to cook, easy to adapt and designed to work with what you already have in the fridge.
Our food lead, Emily Lloyd, co-created the book with chef Bob Andrew and some of our other brilliant Riverford foodies including Lewis, head chef at the Field Kitchen and Dino who leads the canteen team in serving us inventive dishes everyday.
Emily says “We’re always asked for more simple, veg-packed family dinners that you can throw together midweek, so we’re very excited to share a book crammed with over 100 of them — all new, fresh and vibrant, with flavour firmly at the heart.
“The daily question of ‘what to have for dinner?’ can get really boring, and it’s easy to turn to the same familiar recipes time and time again. But everything in this book is fuss-free, quick to make and designed to keep dinnertime exciting.
“Because we believe cooking from a veg box is the best way to eat, we’ve made the veg in every recipe adaptable, with plenty of swap suggestions.
“We’ve had so much fun writing these recipes, and we can’t wait to see them become part of everyday cooking — and to hear which ones become your favourites.”
